Have you ever wished for something to happen and then it does?!! Not me, I just execute my dreams into submission on the regular! Case in point, I felt like making something with pine nuts that was going to make it rain on my taste buds. I usually look very confused in the market because I am always so conflicted about proteins. Sometimes I over think my selections of proteins, but today it worked out in my favor and I got some wild ass salmon. Make note salmon may be quite the delicacy in the future. The next time I make a dish similar to this, I definitely want to use an immersion circulator and that would take it over the top! I went ahead and pan seared this salmon. I kind of have this technique I use, where right at the end of cooking salmon, I cover it for about for 2-3 mins with the heat off. It works for me and produces a sexy medium rare salmon, just like I thought it should! Anyhow, I also threw together a brown rice risotto like dish. The only reason why I did the latter is I had some left over brown, from a previous endeavor. I am not a fan of wasting things at all. As I finishing note, I also had the luxury of having some Brown Dog Chardonnay. Seek it out, its delicious and paired perfectly for a meal of this nature.

Directions
Salmon
- Dash of Salt
- Dill(a sprinkle til it looks pretty!)
- Dash of pepper
- 1 tablespoon of EVOO
- 1 tablespoon of pan roasted pine nuts
Cooking this salmon was fairly easy and quick. I pan seared this salmon skin down on medium heat. I enjoy salmon, medium-rare(more on the side of rare) and that means the cook time was about 8-10 mins. That time may vary based where your at elevation wise and etc, so its best to just keep a vigilant eye on the salmon. At about minute 7, I cut off the heat and covered the pan. In midst of all this, I had the pine nuts roasting alongside the salmon. So that was essentially it, but if you need any assistance, hit up the comment section!!
