“Are you looking at my broth BROOOOO?!!”

Each week I try to work in an all veggie meal, just because it feels right! No, the real reason is I started to see a lot of sub-par protein when I was shopping, so I adopted this one vegetarian meal a week. Now I think cabbage is one those vegetables that is under served for the most part, so I tend to grab it and try to incorporate it in different ways. This cabbage soup I made, was just spur of the moment and I added a few more fresh vegetables, along with some black beans for a protein kick. Sometimes when you’ve had a solid workout, it furthers that euphoric feeling when you eat really well. If its not readily apparent, I love soup!! It kind of reminds me of Medieval Times…not the real time period, but the theme park! They actually have an excellent consume, but I don’t think they officially call it that when you’re there!

Directions
- Half head of cabbage
- 32oz Low Sodium Beef broth (I used left over broth from Ox Tails I made, strained the fat)
- 1/2 Onion(medium size)
- 1 Clove of Garlic
- 2 Tbsp of Turmeric (if you can find fresh turmeric that’s the absolute best option)
- 1 teaspoon onion powder
- Dash of Sea Salt
- Pinch of lemon zest
- 1/2 teaspoon red pepper flake
- 2 teaspoons of Bragg’s apple cider vinegar
- Handful of cherry tomatoes
- Handful of broccoli
- 1 cup of black beans
First I chopped the cabbage up and I set that to the side. You can choose to cut it in a length wise style or just whatever feels right for your soup eating habits! I combine all the dry seasons above, onions, vinegar, chopped garlic, broth and vinegar into a tall pot. I let this come to a boil and reduce the heat, adding in the cabbage first. I let the cabbage get almost tender, then I add in the broccoli florets and tomatoes, letting them get happy together for about 8 minutes. If the liquid does not cover all the veggies, add some water, which is what I did and you want to make sure the broccoli doesn’t over cook. This all took about 35-40 minutes and finished the soup off with some precooked low sodium black beans on top. I think you can switch around veggies and maybe even squash would be a great choice as well. This could be a good meal for dinner or lunch or if you’re kind of weird like me; whenever you feel like it damn it!
