“Can I ask you a question…Salmon…WHATTT..Croquettes…Uhhhhh”!!

I came home from work today and I thought to myself, man it feels like I have been on a journey, but its only Tuesday!! In an effort to extend that journey in a positive light, I decided to make some Salmon Croquettes. This may be one of my favorite things to cook because at this point I can whip it up fast and I’ve adapted my recipe to be a healthier version of past recipes. I did pivot to add something different instead of a carb option; I went with a cauliflower crumble. This was a first attempt, but it actually turned out really well! This whole meal took about 45 minutes from start to finish, so it’s perfect if you had a long day.

Directions
Salmon Croquettes

  • 1 can of Salmon or ¼ of cup of Shredded Fresh Salmon
  • ½ cup of Oatmeal Flour
  • 1 Egg
  • ½ Onion(white)
  • ½ cup of Sweet Peppers
  • 1 serrano pepper(optional but I enjoy heat, capsaicin has all types of benefits)
  • 1 tablespoon of finely chopped Ginger(can do less or omit)
  • ½ teaspoon of Apple Cider Vinegar
  • 1 teaspoon of Dill
  • ½ teaspoon of Cayenne Pepper
  • 1 tablespoon EVOO
  • ½ tablespoon of Coconut Oil
  • Sea Salt and Pepper to taste( I did about 2 pinches of salt)

I started by adding the sweet peppers, onion, ginger, and Serrano pepper to the blender. I use the pulse a few times until it look not too small, but just right for a patty. I then added the salmon to the mix, which I drained because in this instance I used canned salmon. I then added the oatmeal flour, which I just grinded up ½ cup of oatmeal in my spice grinder. I then added the dry seasoning, apple cider and mix everything together (a medium size bowl will work for all of this). I then formed patties, adding them into a skillet with olive oil and coconut oil. I browned each side, which took about 8-10 minutes at medium high heat.

Cauliflower Crumble

  • 12oz bag of cauliflower
  • 1-2 tablespoon of evoo(drizzled)
  • 1-2 tablespoon of parmesan cheese
  • Sea Salt and Pepper to taste
  • Baking sheet

I preheated the oven to about 375 degrees to get started. I blended a 12 ounce bag of cauliflower, again using the pulse setting until the cauliflower looked like chunky rice! Once that was complete I poured the cauliflower onto the baking sheet. I then added the salt (about 2-3 pinches) and pepper (3-4 pinches). I finished off with the parmesan and then drizzled olive oil over the top. This took about 20-25 minutes to cook to my liking, which was just getting the edges brown. I let it cool a bit and mixed it all together, placing it in between the Salmon Croquettes.
