CHICKEN TASTE GOOD! #bloodmarychicken

Over the weekend, I thought it would be great to have a Bloody Mary from scratch. So I went ahead and blend together: tomato, tomato paste, garlic, red peppers, worcestershire sauce, black pepper, onion powder, lemon juice, salt and water. It came out tasting not too bad, but it just wasn’t like the thick consistency of normal Bloody Mary’s, probably needed some more tomato paste! I had some left over and I figured I could use this mixture to marinate some chicken and roast. I went ahead and tweak the recipe a little bit, added some soy sauce (low sodium) to the marinade and that really made everything come together. I also roast some garlic and had made some lentils as the side. Some times when you get a little dangerous, magic happens!

Directions

Bloody Mary Sauce

  • Small Box of Cherry Tomatoes
  • 2 Red Peppers
  • 2 Cloves of Garlic
  • 4 Green Olives
  • 2 Teaspoons Onion Powder
  • 1 Teaspoons Black Pepper
  • 1 Lemon’s worth of juice
  • 3-4 Liberal splashes of Worcestershire
  • 1/2 can of tomato paste
  • 1 Splash of Low Sodium Soy Sauce
  • Vodka( Titos!)

I put all the above in a blender and marinated the chicken in this sauce for about 36 hrs. I removed the chicken from the sauce  and cooked at 450 degrees, really for about 35 minutes. The last 10 minutes I threw the chicken below in the broiler(keep a careful eye if you do this). The sauce I put in a saucepan, letting it cook down through out the chicken cooking. I watched this very closely until it got the consistency I was looking for. I also added in some vodka as well as salt/pepper to taste. I will say this, most of the time I am cooking quick and really never measure seasonings. However, the most important part of my cooking is tasting things as I go, so that I can get to  “the state of deliciousness”(this is similar too “the state of enlightenment”)!
