Jive Turkey Bacon On A Saturday!!!?!

The weekend has fallen upon us and the excitement factor is at an all-time high, at least for me!! I made a quick breakfast, so I could start the day of properly. I decided firmly on eggs, turkey bacon and some special grits. Now for people who are unfamiliar with grits, shame on you because its a delicious breakfast staple! With the grits, I added a broccoli puree (included tomato, garlic, tomatillo, garlic, onion, olive oil and broccoli) I made in advance and it made me feel less guilty when eating these grits! I wanted to have some poached eggs, so I went ahead and poached two eggs in a shallow saucepan. Lastly, let’s talk about turkey bacon for a moment. I know there are people that believe “Turkey” and “Bacon”, should never go together because of the shaming that’s directed squarely at the Swine Gods!! However, I think you should never discount any delicious thinly sliced meat and if you want to call it “Bacon”, it’s more of an homage…and I’m done!

Directions(Egg Poaching 101)
- Bring water in a saucepan to almost boiling. If the water is already boiling, turn down the heat until it is no longer boiling in the pan. Then add one or two teaspoons of vinegar to the water, if you want. The vinegar will help the egg whites to solidify.
- Next I get the water in a whirlpool motion in the pan (be careful not to do this too strong due to hot water!), adding the eggs one by one in the center of the whirlpool. This helps wrap the egg white around the yoke.
- Turn off the heat. Cover. Let sit for 4 minutes, until the egg whites are fully cooked.
- Lift eggs out of pan with a slotted spoon.
