I love cooking a meal that takes around 30 minutes. I do work in the day and when I come home, I want something usually healthy and relatively quick to make. These tacos I made with assorted veggies on hand and I used low-fat Greek yogurt instead of sour cream. Another crucial thing is warming up tortillas on an open flame, which gives an authentic taste. Do not try doing this unless you’ve mastered the flipping of tortillas and hotness that is involved with this technique! My hands are immune to hotness!
Chicken Tacos
- 1lbs Ground Chicken
- 2 Tablespoons ground cumin
- 2 garlic cloves (graded into oil)
- 1 teaspoon chipotle chili powder
- 1 teaspoon coriander
- 1/4 teaspoon cayenne powder
- 1/2 teaspoon of fennel powder
- 1/2 cup red onions
- 1/2 cup dice tomatoes
- 1 serrano pepper
- 1 lime
- 2 tablespoons of extra virgin olive oil
- cilantro
- Salt and Pepper to taste, I use liquid amino to substitute salt sometimes.
- Low-fat Greek yogurt
- Tortillas
In a large saute pan, add evoo on medium heat and then add garlic. I make sure not to leave the garlic in too long, do want it to get really brown so it should just be about 2 -3 mins at most. I then add in the ground chicken, folding in all the dry seasonings above. Total cook time is about 15 mins for the ground chicken and when it has settle I add the juice from one lime on top of the ground chicken. While the flavors are getting all excited, getting to know each other and really forming a bond that’s deeper than rap, I then start with the tortilla process! I usually go with a healthier tortilla just because it makes me feel better and I warm them up over an open flame getting slightly burned edges. This is a risky technique, so you can use the microwave and wrap the tortillas(about 4-5 is best) in a damp paper towel for about 30 seconds. Once the tortillas are all ready, I add a dollop of low-fat Greek yogurt to the bottom, then the ground chicken, finish the top with the dice tomatoes, chopped serranos, red onion and cilantro. If I do have a little more time sometimes I will make my own salsa because that’s just how I roll! Fairly simple, really quick and easy meal.
