Lets #ash it out!

I am a big fan of corn beef hash, I have loved it ever since I was a tiny little poppy-seed! Often I would grab a can of corn beef, put it in a bowl with space in the middle for an egg, cover it up and a party in my belly occurred 4mins later fresh out the microwave. As I am older I pay attention to sodium in food especially and that canned corned beef is full of sodium. My solution, I make my own turkey hash! This was very easy, I just got some ground turkey(1lbs), potatoes and added season to taste. I did this all in a non-stick skillet with a little bit of olive oil and I put the peeled potatoes in the skillet first to brown. After I put those potatoes to the side and cooked the ground turkey, adding seasoning to taste. Then I added back the potatoes and cook until I get a nice little crust going, which is pivotal for a solid hash.  Its crucial that all this is done with music of your choice in the background, for this dish I believe I had “The Blow – True Affection” blasting for my neighbors at 8 AM!!

When poaching eggs its important to get a whirlpool going in the boiling water and then you drop the egg in the middle gently. I finished the dish with some lime zest just because it looked nice and I love citrus! Below I have listed some of the seasonings I used in the ground turkey.

Seasoning

  • Chili Powder
  • Paprika
  • Garlic Powder
  • Cumin
  • Black Pepper
  • Pinch of Salt
